Ingredients

1 medium spaghetti squash

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup grated mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish

Olive oil for drizzling

Instructions

Prepare the Spaghetti Squash:

    - Preheat your oven to 400°F (200°C).

      - Carefully slice the spaghetti squash in half lengthwise, then scoop out the seeds using a spoon.

        - Drizzle a bit of olive oil on the insides of the squash halves and season generously with salt and pepper.

          - Place the squash halves, cut-side down, on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the flesh is tender and can be easily scraped into strands with a fork.

            Cook the Turkey Marinara Filling:

              - In a large skillet, heat a splash of olive oil over medium heat.

                - Add the diced onion and sauté for about 3-4 minutes, or until the onion becomes translucent. Then, stir in the minced garlic and cook for an additional minute until fragrant.

                  - Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook the turkey until browned and fully cooked, approximately 5-7 minutes.

                    - Mix in the crushed tomatoes, tomato paste, dried oregano, dried basil, and red pepper flakes. Season with salt and pepper to taste. Allow the mixture to simmer for about 10 minutes, letting the flavors meld beautifully.

                      Combine and Stuff:

                        - Once the spaghetti squash is roasted, remove it from the oven and allow it to cool for a few minutes.

                          - Use a fork to carefully scrape the flesh into spaghetti-like strands, keeping the shells intact to hold the filling.

                            - In a large mixing bowl, combine the spaghetti squash strands with the turkey marinara mixture. Stir well to ensure the squash is evenly coated with the savory filling.

                              Bake the Stuffed Squash:

                                - Preheat your oven again to 375°F (190°C).

                                  - Spoon the turkey and spaghetti squash mixture back into the hollowed-out squash shells.

                                    - Generously top each filled squash half with shredded mozzarella and grated Parmesan cheese.

                                      - Return the stuffed squash to the oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

                                        Serve:

                                          - Once baked, remove the stuffed spaghetti squash from the oven and let it cool for a moment.

                                            - Garnish with fresh basil leaves for a pop of color and aroma before serving.

Enjoy your hearty and nutritious meal that combines comfort and flavor!
