2 cups fresh corn kernels (approximately 4 ears of corn)

1 cup crumbled feta cheese

1/2 cup Greek yogurt

1/4 cup mayonnaise

1/2 red bell pepper, finely diced

2 green onions, thinly sliced

1 small jalapeño, seeded and minced (optional for a spicy kick)

Juice of 1 lime

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and freshly cracked pepper to taste

Fresh cilantro for garnish (optional)

Prepare the Corn: If using fresh corn, fill a large pot with water and bring it to a rolling boil. Carefully add the corn ears and cook them for 3-5 minutes until they are tender. Drain the corn and let it cool completely. For an added depth of flavor, consider grilling the corn on the cob until it has nice char marks before cutting off the kernels.
