1 pound breakfast sausage (choose either mild or spicy based on your taste)

8 miniature slider buns

4 large eggs

1 cup shredded cheddar cheese

½ cup pure maple syrup

1 tablespoon Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish, optional)

Instructions
 

Cook the Sausage: In a large skillet set over medium heat, crumble the breakfast sausage into the pan. Cook while stirring frequently for about 8-10 minutes or until the sausage is browned and no longer pink. Once cooked, use a slotted spoon to transfer the sausage to a plate lined with paper towels to absorb any excess grease.

    Prepare the Eggs: Lower the heat to low in the same skillet. Crack the eggs directly into the pan. Using a fork, whisk the eggs together, then add a pinch of salt and pepper. Scramble gently for about 3-4 minutes, stirring occasionally, until the eggs are just set. Remove the skillet from the heat.

      Toast the Buns: Take each slider bun and slice it in half. In a separate skillet, add the olive oil, heating it over medium. Place the cut sides of the buns in the skillet and lightly toast them until they are golden brown, about 1-2 minutes.

        Assemble the Sliders: On the bottom half of each toasted slider bun, add a generous scoop of the cooked sausage first. Follow this with a spoonful of the scrambled eggs, then finish with a sprinkle of shredded cheddar cheese. Drizzle a bit of maple syrup and add a touch of Dijon mustard over the cheese for a flavorful kick.

          Melt the Cheese: Arrange the assembled sliders in the same skillet or transfer them to a baking dish. Cover them with a lid or some aluminum foil and let them heat through for about 2-3 minutes, or until the cheese is nicely melted.
