2 cups rolled oats

1 ½ cups unsweetened almond milk (or your preferred milk)

2 medium apples, peeled and diced

½ cup raisins

1/3 cup maple syrup (or honey for sweetness)

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon vanilla extract

¼ teaspoon salt

¼ cup chopped walnuts (optional, for added texture)

Optional Toppings: yogurt, fresh apple slices, extra walnuts, or a drizzle of maple syrup for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly with oil or lining it with muffin liners to facilitate easier removal of the cups after baking.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, ground nutmeg, and salt. Stir the mixture thoroughly to ensure that all the dry ingredients are well mixed and evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, and vanilla extract until smooth and well combined.

        Blend Wet and Dry Ingredients: Pour the wet mixture into the bowl containing the dry ingredients. Add the diced apples and raisins, gently stirring until the mixture is evenly coated and all ingredients are well incorporated.

          Incorporate Nuts (optional): If you choose to include them, fold in the chopped walnuts for an extra crunch and delightful flavor.
