Ingredients

1 cup Medjool dates, pitted and roughly chopped

1 cup semi-sweet chocolate chips

1/2 cup unsweetened cocoa powder

1/2 cup almond flour (or any nut flour of your choice)

1/4 cup coconut oil, melted

1/4 cup pure maple syrup or honey

1 teaspoon pure vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon fine sea salt

Optional: 1/2 cup chopped walnuts or pecans for added crunch

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, ensuring there’s some overhang on the sides for easy removal.

Blend Dates: In a food processor, add the chopped, pitted Medjool dates. Pulse until they form a thick, sticky paste. If the dates seem a bit dry and difficult to blend, add a teaspoon of water gradually to assist in creating a smooth consistency.

Melt Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips with the melted coconut oil. Microwave in 30-second intervals, stirring between each session, until the mixture is completely smooth and free of lumps.

Combine Wet Mixtures: In the food processor with the date paste, add the melted chocolate mixture, maple syrup (or honey), and vanilla extract. Pulse all ingredients together until you achieve a well-combined, smooth mixture.

Mix Dry Ingredients: In a separate mixing bowl, sift together the almond flour, cocoa powder, baking powder, and salt. Ensure all dry ingredients are blended evenly.

Combine Wet and Dry: Gradually add the dry mixture to the wet date and chocolate mixture in the food processor. Pulse gently until just combined—the batter should be moist but not over-mixed. If desired, fold in the chopped walnuts or pecans for extra crunch using a spatula.

Bake: Transfer the brownie batter into your prepared baking pan, spreading it out evenly with a spatula. Place the pan in the preheated oven and bake for 20-25 minutes. Check for doneness by inserting a toothpick into the center; it should come out mostly clean, with just a few moist crumbs clinging to it.

Cool: Once baked, remove the brownies from the oven and allow them to cool in the pan for about 10 minutes. Use the parchment paper overhang to carefully lift the brownies out of the pan and transfer them to a wire rack to cool completely.

Cut & Serve: Once they are completely cool, cut the brownies into squares or rectangles. Serve them up and enjoy the rich, fudgy flavors of your Sweet Chocolate Date Brownies!

                      - Presentation Tips: For an extra touch, dust the cooled brownies with a sprinkle of powdered sugar or cocoa powder before serving, and consider serving them with a scoop of vanilla bean ice cream or a dollop of whipped cream for an indulgent experience!
