2 cups old-fashioned rolled oats

1 cup mixed nuts (such as almonds, walnuts, and cashews), roughly chopped

1/2 cup sunflower seeds

1/2 cup honey or maple syrup (substitute maple syrup for a vegan option)

1/4 cup almond butter or peanut butter

1/4 cup brown sugar (optional, adds extra sweetness)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

1/2 cup chocolate chips (optional but highly recommended!)

Prep the Pan: Preheat your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, allowing some overhang on the sides to facilitate easy removal later.

    Toast the Oats and Nuts: Spread the rolled oats and chopped mixed nuts evenly across a baking sheet. Toast them in the preheated oven for 10-12 minutes, stirring once halfway through, until they turn lightly golden and emit a fragrant aroma. Once toasted, remove from the oven and allow to cool slightly.

      Combine Wet Ingredients: In a medium saucepan over low heat, combine the honey (or maple syrup), almond or peanut butter, brown sugar (if using), vanilla extract, ground cinnamon, and salt. Stir gently until the mixture is well combined and warmed through but not boiling.

        Mix Dry Ingredients: In a large mixing bowl, combine the cooled toasted oats, chopped nuts, sunflower seeds, dried cranberries (or raisins), and chocolate chips. Stir the mixture well to ensure all dry ingredients are evenly distributed.

          Combine Mixtures: Carefully pour the warm honey-nut mixture over the dry ingredients in the bowl. Using a rubber spatula or a wooden spoon, mix thoroughly until all the dry ingredients are coated and combined with the wet mixture.
