Ingredients

2 large sweet potatoes, peeled and cut into 1/2-inch cubes

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, canned, or frozen)

1 red bell pepper, diced

1 small red onion, diced

1 jalapeño, diced (optional, for added spice)

1 cup shredded sharp cheddar cheese

1 cup diced avocado or guacamole, for topping

Fresh cilantro leaves, for garnish

1 lime, cut into wedges, for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot enough for roasting.

Prepare the Sweet Potatoes: In a large mixing bowl, drizzle the diced sweet potatoes with olive oil. Sprinkle in the smoked paprika, ground cumin, and season generously with salt and black pepper. Toss until all the sweet potato pieces are well-coated.

Roast the Sweet Potatoes: Arrange the seasoned sweet potatoes in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for about 25 minutes, or until they are tender and have started to caramelize, making sure to flip them halfway through for even cooking.

Sauté the Vegetables: While the sweet potatoes are roasting, heat a skillet over medium heat and add a splash of olive oil. Sauté the diced red onion and bell pepper for around 5-7 minutes, stirring occasionally until they soften. If you’re using jalapeño for a bit of heat, add it to the skillet and continue cooking for another 2 minutes.

Combine Ingredients: In a large mixing bowl, gently combine the roasted sweet potatoes, sautéed vegetables, black beans, and corn. Stir well until all ingredients are evenly mixed.

Layer in Casserole Dish: Transfer the combined mixture into a greased 9x13-inch casserole dish. Spread it out evenly for proper baking.

Add Cheese: Generously sprinkle the shredded sharp cheddar cheese over the top of the sweet potato mixture, ensuring an even coverage for a delightful cheesy finish.

Bake the Casserole: Place the casserole in the oven and bake for an additional 15-20 minutes, or until the cheese is melted, bubbly, and slightly golden.

Serve: Once your casserole is done baking, carefully remove it from the oven and allow it to cool for a few minutes. Top with diced avocado or a swirl of guacamole and fresh cilantro leaves for a vibrant finish. Serve each portion with a lime wedge on the side for a zesty kick.
