1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, diced

1 bell pepper (red or green), chopped into vibrant chunks

1 medium onion, diced

2 cloves garlic, minced

1 inch fresh ginger, finely grated

1/4 cup soy sauce

1/4 cup apple cider vinegar

1/4 cup packed brown sugar

2 tablespoons ketchup

1 tablespoon cornstarch

1 tablespoon vegetable oil

Salt and pepper to taste

Cooked rice, to serve

Fresh cilantro or sliced green onions, for garnish (optional)

Marinate the Chicken: In a bowl, whisk together the soy sauce, apple cider vinegar, brown sugar, ketchup, and grated ginger until well combined. Add the chicken pieces, ensuring they are fully coated in the marinade. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for deeper flavor.

    Prep the Sauce: In a small bowl, mix the cornstarch with 2 tablespoons of water, stirring until smooth. Set aside for later use.
