1 block (14 oz) of extra-firm tofu, pressed and cut into 1-inch cubes

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon olive oil

1 tablespoon pure maple syrup

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ground ginger

1 teaspoon smoked paprika

Salt and freshly cracked pepper, to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes to prevent burning)

For the Cherry Salsa:

1 cup fresh cherries, pitted and coarsely chopped

1 small red onion, finely diced

1 jalapeño, seeded and minced (optional, for a spicy kick)

Juice of 1 fresh lime

1 tablespoon honey (or agave syrup for a vegan option)

2 tablespoons fresh cilantro, chopped

Salt, to taste

Prepare the Tofu: In a medium bowl, combine soy sauce, olive oil, maple syrup, rice vinegar, garlic powder, ground ginger, smoked paprika, and a pinch of salt and pepper. Mix well to combine. Gently add the cubed tofu to the marinade, ensuring all pieces are well-coated. Cover and let marinate for at least 30 minutes, but ideally 1-2 hours for enhanced flavor.

    Make the Cherry Salsa: In a separate mixing bowl, blend together the chopped cherries, finely diced red onion, minced jalapeño (if using), lime juice, honey or agave syrup, and freshly chopped cilantro.
