1 red bell pepper, cut into 1-inch chunks

1 small zucchini, sliced into ½-inch rounds

1 red onion, cut into wedges

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

2 ripe tomatoes, diced

1 small red onion, finely chopped

1 fresh jalapeño, finely chopped (optional for spice)

1 ripe avocado, diced

Juice of 2 lemons
