Ingredients

1 block firm tofu (14 oz), pressed and drained

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon maple syrup

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

1 tablespoon olive oil (for grilling)

Fresh basil leaves (for garnish)

For the Strawberry Salsa:

1 cup strawberries, hulled and diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced

Juice of 1 lime

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped

Instructions

Prepare the Tofu Marinade: In a medium bowl, whisk together the soy sauce, sesame oil, maple syrup, rice vinegar, minced garlic, and grated ginger until well combined. Cut the pressed tofu into 1-inch cubes and gently add the cubes to the marinade. Make sure all sides are coated and allow to marinate for at least 30 minutes, stirring occasionally for even flavor absorption.

Coat the Tofu: Once marinated, sprinkle the cornstarch over the tofu cubes. Gently toss until the tofu is evenly coated with cornstarch. This step is crucial for achieving a beautifully crispy texture when grilled.

Make the Strawberry Salsa: In a large bowl, combine the diced strawberries, finely chopped red onion, minced jalapeño, fresh lime juice, salt, pepper, and chopped cilantro. Mix thoroughly to combine all the ingredients, and taste to adjust the seasoning as needed. Set the salsa aside to allow the flavors to develop.

Preheat the Grill: Preheat your grill or grill pan to medium-high heat. To prevent the tofu from sticking, lightly brush the grill grates with olive oil.

Assemble the Skewers: Thread the marinated tofu cubes onto skewers, packing them closely together for even grilling. For an extra burst of flavor and color, feel free to alternate the tofu with bell pepper or zucchini slices.

Grill the Skewers: Place the assembled skewers on the preheated grill. Grill for approximately 10-12 minutes, turning them occasionally, until the tofu is golden brown and crispy on all sides.

Serve: Once the tofu skewers are grilled to perfection, remove them from the grill and allow them to rest for about a minute. Serve warm with a generous scoop of the strawberry salsa on the side. Garnish with fresh basil leaves to enhance the aroma and presentation.

                Prep Time: 30 mins | Total Time: 1 hr | Servings: 4

                  - Presentation Tips: Arrange the skewers on a rustic wooden board or a colorful plate, placing the strawberry salsa in a small bowl alongside for a vibrant touch. You can also sprinkle additional diced strawberries and basil around the plate for an added visual appeal.
