Ingredients

2 boneless, skinless chicken breasts

1 cup fresh pineapple, diced

1 red bell pepper, julienned

1 small red onion, thinly sliced

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon ground ginger

2 tablespoons soy sauce

1 tablespoon honey

2 tablespoons vegetable oil

Salt and pepper, to taste

4 large tortillas (whole wheat or spinach)

Lime wedges, for serving

Instructions

Marinate the Chicken: In a mixing bowl, whisk together the soy sauce, honey, garlic powder, ground ginger, salt, and pepper to create a marinade. Add the chicken breasts to the bowl, ensuring they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a more intense flavor infusion.

Cook the Chicken: In a large skillet, heat the vegetable oil over medium heat. Once hot, remove the chicken from the marinade and place it in the skillet. Cook the chicken for approximately 6-7 minutes on each side, or until it is golden brown and reaches an internal temperature of 165°F (75°C). After cooking, transfer the chicken to a cutting board and let it rest for 5 minutes. Slice the chicken into strips for the wraps.

Prepare the Vegetables: Using the same skillet, add the sliced red onion and julienned bell pepper. Sauté the vegetables for 3-4 minutes until they soften but retain a slight crunch. Once done, remove the skillet from the heat and allow the vegetables to cool slightly.

Assemble the Wraps: Place the tortillas flat on a clean surface. Start by layering the sliced chicken in the center of each tortilla. Top with the sautéed vegetables, diced pineapple, avocado slices, and a sprinkle of chopped cilantro.

Roll the Wraps: Fold the sides of each tortilla inward, then roll the tortilla tightly from the bottom up, enclosing all the delicious fillings securely inside.

Serve: Cut each wrap in half diagonally for a stylish presentation. Serve the wraps with lime wedges on the side, perfect for squeezing over the top for a zesty finish.
