1 lb ground turkey

2 cups fresh spinach, finely chopped

6 large eggs

1/2 cup shredded cheddar cheese

1/4 cup onion, diced

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika (optional for extra flavor)

1 tablespoon olive oil

Cooking spray or muffin liners for greasing the tin

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

    Cook the Turkey: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes. Add in the ground turkey, sprinkle with salt, black pepper, and smoked paprika (if using). Cook the turkey mixture until it's browned and fully cooked through, approximately 5-7 minutes. Once done, remove from heat and allow it to cool slightly.

      Mix the Filling: In a large mixing bowl, combine the cooked turkey mixture with the chopped spinach and shredded cheddar cheese. Stir until well blended.

        Prepare the Egg Mixture: In a separate bowl, crack and whisk the eggs until smooth and uniform. Season the egg mixture with a little pinch of salt and pepper to enhance the flavor.

          Assemble the Cups: Lightly grease a 12-cup muffin tin with cooking spray or place muffin liners in each cup. Evenly distribute the turkey and spinach mixture into each muffin cup, filling them about halfway. Carefully pour the whisked eggs over the filling until each cup is almost full.

            Bake: Place the muffin tin into the preheated oven and bake for 18-20 minutes, or until the egg cups have set and the tops are lightly golden brown.
