4 large bell peppers (any vibrant color)

1 lb ground beef or turkey

1 cup cooked rice (either white or brown)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (choose with or without green chilies based on preference)

1 packet (1 oz) chili seasoning mix

1 cup corn (frozen or canned)

1 cup shredded cheese (choose between cheddar or Monterey Jack)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Sour cream or sliced avocado for serving (optional)

Preheat the Oven: Begin by setting your oven to preheat at 375°F (190°C) to ensure it’s ready for baking.

    Prepare the Bell Peppers: Carefully slice off the tops of the bell peppers and remove all seeds and membranes. Lightly brush the outsides of the peppers with olive oil, then place them upright in a baking dish for stability.

      Cook the Meat: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the ground beef or turkey, using a spatula to break it apart as it cooks. Sauté for about 5-7 minutes, or until it’s browned and cooked through. Be sure to drain any excess fat before proceeding.

        Mix the Filling: Lower the heat to a simmer. Stir in the cooked rice, black beans, diced tomatoes (including their juice), corn, chili seasoning mix, garlic powder, onion powder, cumin, and season with salt and pepper to taste. Mix thoroughly and let the filling simmer for around 5 minutes, allowing the flavors to meld together beautifully.
