Ingredients

1 cup hummus (store-bought or homemade)

1 large tortilla or flatbread

1 medium cucumber, thinly sliced

1 carrot, julienned

1 red bell pepper, thinly sliced

1 cup baby spinach or mixed greens

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

1 tablespoon fresh parsley or dill, chopped (for garnish, optional)

Instructions

In a medium mixing bowl, combine the hummus, fresh lemon juice, minced garlic, and olive oil. Season with salt and pepper to your preference. Mix well with a spoon or spatula until all ingredients are fully incorporated, creating a creamy and zesty garlic hummus.

Place the tortilla or flatbread on a clean work surface. Using a spatula or the back of a spoon, spread a generous layer of your lemon garlic hummus evenly across the entire surface, leaving about an inch border around the edges.

Begin layering your colorful fresh vegetables. Start with a handful of baby spinach or mixed greens, then add the thinly sliced cucumber, followed by the julienned carrot, and finish with the slices of red bell pepper for a vibrant crunch.

For added flavor, sprinkle the chopped fresh parsley or dill over the layered vegetables. This herb garnish will enhance the freshness of the wrap.

Carefully roll the tortilla tightly, starting from one end and gently tucking in the filling as you go. Once you have reached the end, secure the wrap with a toothpick or wrap it in parchment paper for convenient on-the-go snacking.

To serve, slice the wrap in half diagonally which will make it easier to eat and present nicely on a plate. Enjoy immediately or chill in the refrigerator for about 30 minutes for a refreshing cold option.
