Ingredients

1 cup couscous

1 ½ cups vegetable broth or water

2 tablespoons olive oil

1 clove garlic, minced

2 cups fresh spinach, roughly chopped

Juice and zest of 1 large lemon

¼ cup fresh parsley, finely chopped

¼ cup fresh basil, finely chopped

½ teaspoon salt (to taste)

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for extra heat)

¼ cup feta cheese crumbles (optional, for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Couscous: In a medium saucepan, bring the vegetable broth or water to a vigorous boil. Once boiling, add the couscous, remove the pan from the heat, and cover it with a lid. Allow the couscous to sit for about 5 minutes, during which it will absorb all the liquid. Afterward, use a fork to fluff the couscous and set it aside.

Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 1 minute, stirring continuously to prevent it from browning. Next, add the chopped spinach to the skillet and cook for 2-3 minutes, stirring frequently, until the spinach has wilted down.

Combine Ingredients: To the skillet with the sautéed spinach, add the fluffed couscous. Stir in the lemon juice and zest, chopped parsley, basil, salt, black pepper, and red pepper flakes (if you're using them). Mix everything thoroughly so all components are well coated and heated through, about 2 minutes.

Serve: Transfer the zesty couscous and spinach mixture to a serving bowl. For a burst of flavor, optionally sprinkle with feta cheese crumbles. Serve warm, accompanied by lemon wedges on the side for those who desire an extra citrusy kick.
