Ingredients

1 medium zucchini, grated

1 lb lean ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

4 large eggs

1/2 cup shredded cheddar cheese

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

4 large whole wheat tortillas

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Instructions

Sauté Aromatics: In a large skillet, warm the olive oil over medium heat. Add the finely chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes, or until the onion turns translucent and fragrant.

Cook the Turkey: Add the ground turkey to the skillet, using a spatula to break it apart. Stir frequently and cook for 5-7 minutes, until the turkey is browned and fully cooked. Season the mixture with ground cumin, smoked paprika, salt, and pepper, mixing well to ensure the spices are evenly distributed.

Incorporate Zucchini: Stir in the grated zucchini and continue to cook for an additional 3-4 minutes. The zucchini should become tender and release some of its moisture, adding flavor to the filling.

Scramble the Eggs: In a separate bowl, whisk together the eggs until fully blended. Pour the whisked eggs into the skillet with the turkey and zucchini mixture. Gently stir and cook until the eggs are just set, about 2-3 minutes, making sure they remain fluffy. Remove the skillet from heat and fold in the shredded cheddar cheese until melted.

Assemble the Burritos: Place a whole wheat tortilla flat on a clean work surface. Spoon a generous portion of the turkey and zucchini filling into the center of the tortilla. Fold in the sides and then roll it tightly from the bottom to the top, tucking in the filling as you go to create a secure burrito.

Toast the Burritos: (Optional) For an extra crunchy exterior, place the assembled burritos seam-side down in the same skillet over medium heat. Cook for about 2-3 minutes on each side until golden brown and slightly crispy.

Serve: Cut each burrito in half and sprinkle with fresh chopped cilantro for a pop of color and flavor. Serve with a side of salsa or your favorite hot sauce for dipping!
